The vineyard landscape of Šibenik-Knin County is far from uniform. In the southeast, there are coastal locations with shallow red soil and the direct influence of the sea; moving inland, the soil becomes rockier, the altitude increases, and the climatic conditions shift. These differences are not just a geographical curiosity—they are clearly visible in the glass. The wineries in this overview are separated not only by location but also by philosophy: some focus exclusively on a single variety and a single vineyard, while others experiment with cuvées or introduced varieties. What unites them is their reliance on the indigenous grape varieties that this region possesses and that cannot be found elsewhere. Rak Winery is located in Dubrava in the Šibenik hinterland, Testament Winery in Jadrtovac between the hinterland and the archipelago, Prgin Winery in Biline near Primošten, Burnum Winery on the plateau above Vrbnik near Knin, Birin Winery in the Šibenik hinterland, and Baraka Winery on the Srima peninsula between Šibenik and Vodice.
