Bibić is known for bringing Debit—an indigenous Dalmatian white variety long treated as a table wine—back into focus and elevating it to a level suitable for the international market. He was the first Croatian winemaker to export local wines to the USA, and today they are present in top-tier restaurants in New York, Stockholm, and Tokyo. This is not a marketing claim, but concrete proof that this assortment succeeds in markets with a wide selection.
Bas de Bas is a premium line and the name of a six-hectare vineyard planted with Syrah (90%) and Merlot (10%), grown organically. Two old vineyard houses have been restored on the property, functioning as self-sustaining villas for accommodation. Wine from this vineyard is produced only in exceptional years and holds a 93-point rating from Wine Enthusiast. Alongside Bas de Bas, the assortment is organized into seven lines covering a range from indigenous varieties (Eternal) to experimental small batches (Limited) and minimal-intervention wines (Domaine).
The gastronomic program is led by Vesna Bibić, with a menu that changes annually based on the season and available ingredients: veal, game, poultry from their own farm, and vegetables and herbs from the garden. The tasting room, featuring a Dalmatian courtyard, offers tastings paired with snacks and bistro dishes, while the wine and food pairing experience is available by reservation only. Anthony Bourdain visited the winery for an episode of his series No Reservations and described it as one of the most significant culinary experiences of his travels.
