Pelegrini is located at Jurja Dalmatinca 1 in a Renaissance palace right next to St. James's Cathedral. During the warmer months, part of the dining experience takes place on the outdoor staircase with a direct view of the cathedral—a space no other restaurant in Šibenik can offer.

Chef Rudolf Stefan is a Šibenik native. He has been managing the restaurant since the early 2000s and received a Michelin star in 2018. Michelin describes him as a chef with a deep knowledge of the region: he produces his own olive oil, collaborates with regional winemakers on exclusive wine production, and sources ingredients from the sea and land in and around Šibenik. The wine list features over 500 labels.

Four or six-course tasting menus offer a contemporary interpretation of Dalmatian cuisine. Advance reservations are required.
